Unlike heavy butter cakes that rely on chemical leaveners or the mechanical creaminess of solid fat, a true French sponge or biscuit is a study in trapped air, protein structure, and thermal control.

If you have ever pulled a dense, rubbery, or collapsed sponge from the oven, the culprit is almost always a violation of sequence. In professional baking, you never mix out of order. Every stage—from whipping whole eggs to folding a separate meringue and incorporating warm butter—serves a strict structural purpose.

1. The Foundation: Whipping Whole Eggs to the Ribbon Stage

The process begins with whole eggs (or separated yolks) whipped with sugar over gentle heat (a bain-marie) until warm, then whipped to the ribbon stage.
