I keep a knife block, salt, and a pepper grinder on my kitchen island behind the cooktop. I place them on a small, thick wooden cutting board and that anchors them nicely.

Use shelves to keep things off the counters. If there are jars or canisters of things you need to stay out, put them on a wall of shelves or a floating shelf above the countertop. It is important to keep things off the countertops so that you can wipe them down without having to move things.
It is not that you cannot have anything at all on the countertops - although that is ideal, but if you do, put your things in organizers or countertop racks to contain them and look neat and attractive. Keep in mind you will have to move the racks to clean the counters though. At least in a countertop rack you can pick up the whole rack and move it rather than having to move every item. It is best to mount those organizer racks on the wall just off the countertop. Those same rack can also go into cabinets if you have room.
