Whipped Creams

Whipped creams add that little something extra to any dessert. Chantilly Cream is your quintessential whipped cream. There are variations though that are quite divine. Take a look below to discover whipped creams enhanced with unexpected nuances like mascarpone or pastry cream.

To make sure you get a nice whip here are a few tips:

1) Cream does not like moisture. Make sure your hands, bowls and utensils are completely dry. Air them a moment after drying to make sure. I also wipe down my bowls and utensils with alcohol or vinegar. This will remove any trace moisture.

2) Cream must be super cold to whip well. I like to put my cream, bowls, and utensils in the freezer for 20-30 minutes. I only take them out right when I am ready to whip. Be sure to wipe them when you take them out of the freezer to remove any condensation.
