    4 cupcakes or one layer of a cake.. Make 1X this recipe for each layer if you are making a layer cake.

    Stand mixer with paddle and mixing bowl
    Spatula
    Scale and measuring cup or bowl

  • Prep

    Separate the eggs and set the egg whites on the counter an hour prior to bring to room temperature. Refrigerate the egg yolks.

    Eggs (do NOT use carton egg whites!)
    Confectioners’ Sugar
    Cream of Tartar
    Sea Salt 1.5g
    Vanilla Extract

  • Ingredients

    2 Egg Whites (60g)
    Confectioners’ Sugar sifted - 1 C
    Cream of Tartar (1.2 tsp)
    Sea Salt 1.5g (1/4 tsp)
    Vanilla Extract - 5g (1 tsp)

  • Steps

    STEP 1: WHIP THE EGG WHITES
    Start whipping the egg whites over a double boiler. Gradually add in the creme of tartar, then salt and sugar little by little and whip to a soft peak.

    STEP 2: COOL
    Remove from heat and set the double boiler pan in an ice bath while you add the vanilla extract and continue whipping to desired consistency or just until the vanilla is mixed in.

Notes

Whip in some color or other flavor extract if you like at the end, while it's in the ice bath.
