Classic Italian Savoiardi (Crispy Italian Ladyfingers)

The Authentic, Light-As-Air Sponge Biscuit for Tiramisu and Charlotte Cakes
Authentic Italian Savoiardi are light, dry sponge biscuits leavened entirely by the air whipped into separated egg whites and yolks—no butter, oil, or milk. Dusting the piped batons with granulated and confectioners' sugar before baking creates their signature crisp, pearlized crust. This structural crunch allows them to drink up espresso syrup without collapsing into mush.

  • Steps

Step 1: Preheat & Pan Setup:
Preheat the oven to 350°F (175°C). Line two large, flat baking sheets with parchment paper. Fit a large pastry bag with a ½-inch (12 mm) plain round piping tip.

Step 2: Sift the Dry Ingredients:
In a small bowl, whisk together the cake flour (T45) and cornstarch. Sift twice to ensure complete aeration and eliminate any clumping. Set aside.

Step 3: Cream the Egg Yolks:
In a mixing bowl, combine the 4 egg yolks, 50 g of the granulated sugar, and the vanilla extract. Beat on medium-high speed for 3 to 4 minutes until the mixture turns pale cream, thickens significantly, and forms a slow ribbon trail when lifted.

Step 4: Whip the Egg Whites to a Meringue:
In a clean, grease-free bowl, whip the 4 egg whites with a pinch of salt on medium speed until soft peaks start to hold. Gradually sprinkle in the remaining 50 g of granulated sugar in a slow, steady stream while continuing to whip. Increase speed to high and beat until stiff, glossy peaks form that stand firmly upright.

    Step 5: Gentle Folding:
Gently fold about one-third of the whipped whites into the yolk mixture to lighten its density. Add the remaining egg whites and the sifted cake flour/cornstarch blend.

With a wide silicone spatula, fold using broad, sweeping strokes from the bottom center up and over the sides. Work gently and stop as soon as no dry flour streaks remain to keep all that incorporated air intact.

    Step 6: Pipe Uniform Batons:
Transfer the batter to your prepared pastry bag. Holding the bag at a 45-degree angle, pipe straight batons approximately 3½ to 4 inches long and ¾-inch wide onto the parchment, leaving about 1 inch between each biscuit.

Step 7: The Signature Crackled Crust:
Lightly sprinkle a veil of granulated sugar across the top of the piped batons. Let them rest for 1 to 2 minutes so the sugar begins to absorb moisture from the surface, then dust generously with sifted confectioners' sugar. This double layer creates the crisp, pearlized crust that protects the biscuit during dipping.

    Step 8: Bake & Dry:
Bake at 350°F (175°C) for 12 to 14 minutes until golden and dry to the touch. Turn off the oven, prop the oven door open slightly with a wooden spoon handle, and let the trays sit inside for 5 minutes to release excess moisture.

    Step 9: Cool:
Slide the parchment sheets onto wire cooling racks. Allow the savoiardi to cool completely before peeling them off the paper.

    Storing

    Tips
Flour Choice: American all-purpose flour is milled from hard wheat with high protein (10–12%), which makes delicate sponges heavy and tough. Cake flour or French T45 (soft wheat, low protein) is essential for that weightless, melt-in-the-mouth texture.
Texture Control: For classic, sturdy savoiardi meant to hold up to an espresso soak in tiramisu, allow them to fully cool and crisp. For a softer, tea-biscuit crumb, shorten the bake time by 1 to 2 minutes and skip the oven-drying step.
