  • Steps

Step 1: Hydrate and Dissolve the Gelatin
In a small melting pot, combine 1 tsp of gelatin with 4 tsp of cold water and let it stand until thick. Place the pot over low heat, stirring constantly, just until the gelatin dissolves completely. Remove from heat and let it cool down to lukewarm. Do not let it set.

    Step 2: Start the Cream
Add the cold heavy cream to your chilled mixing bowl. Start whipping on low speed (around 4 on a KitchenAid mixer) until the cream gets frothy and begins to build body (about 1–2 minutes).

Step 3: Gradually Add Sugar and Flavor
As the cream thickens, gradually sift in the confectioner’s sugar a little at a time while increasing your mixer speed to medium (around Level 6–7). Once the sugar is incorporated, add the vanilla extract. Continue whipping until the mixture reaches a soft peak stage.

    Step 4: Incorporate the Gelatin
While slowly beating the cream on high speed (Level 8) at the soft peak stage, stream in your cooled, lukewarm gelatin. Continue whipping to a firm peak. Keep a close eye on it—whipped cream goes from ready to overwhipped in an instant! (Look for a firm "Space Needle" peak that holds its shape).

    Application
Cake Layers & Icing: Perfect for filling between sponge layers (like a Chantilly cake) or icing the outside of a cake where stability is required.
Piping: Use with piping bags and festive tips to decorate cupcakes, cookies, brownies, or tarts with sharp, clean shapes.
Toppings: Use a softer whip for immediate dollops on fruit cobblers, pies, sundaes, and hot chocolate.
