If you are not used to sauteing in cast iron, you are going to love the way this cooks. Food does not get overdone on the bottom and not yet done in the middle. It is great for sauteing aromatics like onion and garlic - again I mention - those crispy brown edges without the pearlescent middle - no happening here. The bell peppers overdone on the edges and not in the body - not with this pan. And strips of steak, chicken, fish - it will hold that heat in the pan and cook it through fast.
