  • Prep

    Line a 9×9-inch metal baking
    pan with parchment paper.
    Melt the butter
    Have eggs at room temperature
    and 1 yolk separated

    Preheat to 350F

  • Ingredients

    2½ cups all-purpose flour (300g)
    1 tablespoon cornstarch
    1 teaspoon baking soda or powder (Optional)
    1 teaspoon salt
    1 cup packed light brown sugar (200g)
    ⅔ cup granulated sugar (133g)
    ¾ cup unsalted butter melted (170g)
    1 large whole egg room temperature
    1 large egg yolk room temperature
    1 tablespoon vanilla extract
    1 cup white chocolate chips
    Different flavor chips like toffee, butterscotch,
    and chocolate are good choices. (optional)
    Chopped walnuts (180g) (optional)

  • Steps

    STEP 1: Sift flour, cornstarch, baking soda, and salt together in a medium
    size mixing bowl.

    STEP 2: Whisk the brown sugar, granulated sugar, melted butter, egg, egg
    yolk, and vanilla extract in a large mixing bowl.

    STEP 3: Sift the dry ingredients into the wet ingredients while mixing in
    with a spatula - just enough so there are no clumps of dry ingredients.

    STEP 4: Evenly distribute the chips into the mixture (white chocolate, dark,
    toffee, whatever you like).

    STEP 5: Pour the mixture into the baking pan and spread it evenly. You can
    add a few more chips or nuts on top if you like. Optional.

    STEP 6: Bake at 350F until the edges are firm and golden brown - about 35
    minutes. A toothpick in the center should come out with just a few crumbs.

    STEP 7: Remove from oven and cool to room temperature. Make sure it is
    fully cool before removing and cutting the blondies.

Notes

DECORATING
Garnish a warm blondie with scattered warm chopped walnuts and fresh whipped cream, drizzled with warm caramel sauce, and with chocolate scrolls or slivers sprinkled on top.

SERVING
Serve with ice cream, whipped cream or frosting on top - or plain.

STORING
The blondies will keep in an airtight container for a week. Store them in an airtight container in the freezer for up to 3 months.

TIPS
Measure flour correctly. A common mistake is too much flour. Either measure flour with a scale or if using cup measures, sift before you measure.

Be sure to fully dissolve the sugar in the melted butter, All brown sugar and no white will give a more gooey texture. If you want it a little bit cakey use the leaveners. If you want it more dense and chewy, leave the leaveners out completely.

Mix by hand. For dense and chewy moist you do not want to incorporate air.

PAIRING
The combination of ingredients in blondies have a warm vanilla, caramel flavor. I even love a little warm caramel sauce drizzled over the top. Serve warm with a dollop of fresh whipped cream for an exquisite dessert. Serve as a cold dessert bar for a snack any time. This treat goes well is espresso, caramel macchiato, Baily's Irish Cream, Kahlua or Hot Chocolate.

VARIATIONS

BUTTERSCOTCH BLONDIES
Just mix in a few butterscotch morsels with the batter. (i.e. Nestle Tollhouse)

Chocolate Chip
Add some chocolate ships to the batter for more gooey deliciousness. (i.e. Nestle Tollhouse)

Caramel Chip
The blondies have a caramel flavor. For more caramel add some caramel chips. (i.e. Nestle Tollhouse)

White Chocolate
Add some white chocolate chips to the batter. (i.e. Nestle Tollhouse or better yet a good quality real white chocolate made with cocoa butter, not palm kernel oil)
