    Stand mixer

  • Prep

    Preheat oven to 300° F.
    Grease a 9x13 baking dish
    Line the dish with parchment paper. Leave enough sticking up on the sides so you can life the chewies out easily.

    Oven 350F for approx 30 minutes

    Butter 227g (1 cup)
    Granulated Sugar 200g (1 cup)
    Brown Sugar 213g (1 cup, packed)
    Vanilla Extract 15g (3 tsp)
    Eggs 2 large, room temperature
    Flour 240g (2 cups)
    Pecans, chopped 125g (1 cup)

  • Steps

    STEP 1: Cream the butter and sugar in the stand mixer with the paddle on medium high until pale, light, and fluffy.
    STEP 2: Whip the eggs and vanilla by hand and then mix into the creamed butter in portions, a tablespoon at a time on low to medium low speed.

    STEP 3: Change to the whisk attachment. With the mixer on low to low-medium, whisk in the flour a little at a time.

    STEP 4: Whisk on medium until the mixture is smooth with no lumps or dry bit.

    STEP 5: Stir in the chopped pecans distributing them evenly.

    STEP 6: Pour the batter into the prepared baking dish.

    STEP 7: Bake at 350F for 35-45 minutes just until light brown.

    STEP 8: Place the pan on a cooling rack and let cool to touch Then lift the chewies out of the pan with the parchment paper and place them on the cooling rack. Allow them to cool completely to room temperature before cutting and serving.
