Royal Icing

Royal icing is often used to decorate cookies to make pretty colorful Christmas trees, wreathes, and other images. It holds color well and hardens so that shaped and colored icing doesn't rub off when you handle the cookie.

Royal Icing

This is used on cakes, pastries, 7sweet breads, donuts, cookies, and more. Pour or spoon the glaze over the top to completely cover the top and let it drip down the sides. If you want less glaze create pretty drizzles over the top and drip down the sides.

    Mixing bowl
    Spatula
    Hand Whisk

  • Prep

    Set the eggs out to bring them to room temperature.
    Separate eggs and store the yolks in an airtight container in the refrigerator.
    Put the egg whites in the mixing bowl.
    Sift the confectioner's sugar

    Confectioner’s Sugar
    Vanilla Extract or Bean
    Eggs

  • Ingredients

    Egg Whites 60g (4 eggs)
    Vanilla  2 tsp
    Confectioners’ Sugar 500g

  • Steps

    STEP 1:  Whisk th starting on low then medium-low speed until frothy (1-2 minutes)

    STEP 2: Add the vanilla

    STEP 3:  Slowly whisk in the confectioners’ sugar, little by little.

    STEP 4:  Increase speed to medium, then medium high and whip to soft peak. It should be stiff and shiny. If desired, mix in food coloring and pipe onto dessert.

FLAVORINGS
Vanilla flavors the basic icing
Nut extracts such as almond or hazelnut..
Ginger extract enhances gingerbread cookies
Rum flavor goes well with oatmeal, flax, or almond cookies.
Use  caramel, toffee, or butterscotch sauces to flavor
Do not use liquids like fruit juices or oil-based flavorings.
