This is a favorite topping with classic cheesecake. It can also be used to make strawberry shortcake.

    Colander for washing the strawberries
    Knife and cutting board

    Wash and quarter the strawberries
    Juice and zest a large lemon

    Strawberries - 1 lb
    Lemon - Large
    Granulated Sugar
    Vanilla Extract

    Strawberries, quartered 1ob (16oz)
    Granulated Sugar 200g (1 cup)
    Lemon Juice, Fresh 2 tbsp
    Lemon Zest 1 tbsp
    Vanilla Extract 2 tsp

  • Steps

    STEP 1: Cut the strawberries in quarters. You want 1" size pieces approximately.

    STEP 2: Marinate the strawberries in a bowl with granulated sugar, lemon juice, and vanilla. Let them set 3 hours or overnight.

    STEP 3: Drain the strawberries and set them aside in a bowl and pour the juices into a metling pot.

    STEP 3: Make strawberry syrup. For a thicker syrup add 4 tbsp cornstarch and mix well. Heat the melting pot of juices in a saucepan over medium heat until reduced and thickened to a consistency you like.

    STEP 4: Pour the strawberry syrup over the strawberries in the bowl and mix.

    The topping is ready to be spooned over a dessert.

Notes

If the strawberry syrup gets a little too thick, just mix in a little lemon juice.
